It's not that rings of bells with canons cannot be hung to ring well because
they can. It is when flat crowns are mixed with canons that the problems of
incompatible geometry start.

The only solution offered is to cut off the canons. Is there not a case to
reverse this and cast new bells with canons to maintain compatibility?

This was done at Pebworth, Worcestershire - a derelict five augmented to 6,
