There are various published compositions of 120 Erin Doubles. With the
exception of the one with the bells in 4-5 lying still for a whole six,
they all involve calls at the six end, either two types of single, or a
third's place bob, which requires two singles to be made in the sixes
to avoid falseness. It is straightforward to produce multiples of 360
by ringing each possible six the same number of times. I am not aware
of anyone previously investigating the possibilities for 240s.

Calling a bob every fourth six end gives a 120 with each of the in
course rows twice. This can be joined to a similar out of course 120 to
give a 240. Any such pair of 120s must have at least one corresponding
six in each 120 with any given pair of bells behind and the same bell
making thirds in the middle of the six, giving ample opportunities for
callings with multiple pairs of Stedman Doubles singles. It is possible
to choose the 120s so that every six can be joined in this way, leading
to the following five part 240s:
