Right-click on the chart, select 'source data', select 'series'. The 
top edit box on the right-hand side for each series allows you to 
enter a name, either picked up from the spreadsheet, or just typed in 
as text. Unfortunately there is no way I have ever found to do this 
in bulk, you have to individually edit each one.
