If the name occurs in the parish accounts, then Elizabeth may have been either the parish clerk / sexton (it was not uncommon for women, and widows of previous ones in particular, to hold this office even if some of the more ardous work was undertaken by members of their family) or the local publican (sometimes the parish by-passed the middleman - the ringers - and paid the publican direct)

Not saying what might have happened in this case, but these possibilities need to be factored in.
