They will probably need turning down to the next available bearing size,
so a bit of ovality wont matter, provided there is enough metal left to
take the load.
If not then as has been pointed out, the viability of re using
headstocks becomes questionable. 

I do not work Wednesday Thursday or Friday.

They are still on plain bearings of Taylors, vintage 1909. The gudgeons
will definitely need replacing as some of them are distinctly oval!

Clean the old bearings up, paint and polish them and you will have a
small contribution to the whole project.
